SOFT GOAT'S CHEESE SANDWICH WITH RED PEPPER AND BALSAMIC VINEGAR or PANINO CON CAPRINO, PEPERONI ROSSI E ACETO BALSAMICO

I often think simple is the best, it goes for most things in life, simplicity has a certain beauty that I find hard to resist. Like this soft goat's cheese sandwich with red peppers and balsamic vinegar that is more of a suggestion than an actual recipe. A few good ingredients that together makes one of the most satisfying sandwiches I have had for a long time, the softness and creaminess of the goat's cheese matches perfectly with the crunchiness of the red pepper that is improved by the balsamic vinegar, it's like a chain, all three ingredients connects perfectly with the others and if you use a nice rustic bread, it's heaven!

SOFT GOAT'S CHEESE SANDWICH WITH RED PEPPER AND BALSAMIC VINEGAR or PANINO CON CAPRINO, PEPERONI ROSSI E ACETO BALSAMICO
goat's cheese, I used a very creamy, matured one
red peppers
bread, preferably a wholemeal one and sliced
good balsamic vinegar
salt
extra-virgin olive oil
- Chop the pepper finely and drizzle a little balsamic vinegar over. Add a pinch of salt and not too much olive oil. Mix.
- Spread the goat's cheese over the slices of bread.
- Top with the peppers.
- Eat. Savour the moment!
